Why should I eliminate Gluten?
The flour and bread we consume today is not the same as that of 100 years ago. Highly processed and void of essential bacteria to help us digest it, the protein gluten that is in today's flour and bread irritates our gut lining and prevents us from absorbing the nutrients from our food. This is most likely what makes it one of the most common food sensitivities. Interestingly enough, it can also cause dairy intolerance.
*Gluten, like dairy, may not be troublesome for some. For those who do not experience food addiction, binge eating, cravings nor have other health issues that resolve once gluten is eliminated, long-term abstinence may not be necessary.
